Gluten-Free Caramel Apple Cake
Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup Greek yogurt
- 2 cups peeled and diced apples
- 1/2 cup caramel sauce store-bought or homemade
- 1/4 cup chopped pecans optional
- Powdered sugar for dusting optional
Instructions:
Start by heating the oven to 350F 175C
A 9-inch round cake pan should be greased and floured
Bring the gluten-free flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl and mix them with a whisk
Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy
Mix the eggs and vanilla extract into the butter and sugar until everything is well mixed together
Slowly add the dry ingredients to the wet ones, mixing in the Greek yogurt every so often
Mix the batter well until it's smooth
Make sure the diced apples are spread out evenly in the batter before adding them
Spread out half of the batter in the cake pan that has been prepared
Pour half of the caramel sauce over the batter, and then use a knife to slowly mix it into the batter
Do it again with the rest of the batter and caramel sauce to make it look like marble
If you want, you can sprinkle chopped pecans on top
After the oven is hot, bake it for 35 to 40 minutes, or until a toothpick stuck in the middle comes out clean
The cake should cool in the pan for 10 minutes before being moved to a wire rack to cool all the way down
If you want, you can dust the cake with powdered sugar after it's cooled down and serve the slices with an extra drizzle of caramel sauce
