Garlic-Potato Soup
A hearty, tasty Garlic-Potato Soup that makes you feel good. This soup is great for a comforting meal because it is creamy and full of healthy foods.
Ingredients:
- 4 cups potatoes, peeled and diced
- 1/2 cup celery, chopped
- 1/2 cup carrots, sliced
- 4 cloves garlic, minced
- 1 onion, finely chopped
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
In a large pot, melt butter over medium heat
Add garlic and onion, saut until fragrant
Stir in flour to create a roux, cook for 2 minutes
Gradually whisk in vegetable broth to avoid lumps
Add potatoes, celery, carrots, thyme, rosemary, salt, and pepper
Simmer until vegetables are tender, about 15-20 minutes
Pour in milk and continue simmering for an additional 5 minutes
Adjust seasoning if needed
Serve hot, garnished with chopped parsley
