Keto Chicken Enchiladas Soup

Ingredients:

- 5 lbs chicken breasts, cooked and shredded
- 4 cups chicken broth
- 1 cup diced tomatoes, canned
- 1/2 cup diced green chilies, canned
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tsp cumin powder
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp oregano
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 2 tbsp olive oil
- Lime wedges for serving
Instructions:
In a large pot, heat olive oil over medium heat
Saute onions and garlic until softened
Add shredded chicken, cumin, chili powder, paprika, oregano, salt, and pepper
Cook for 3-5 minutes
Pour in chicken broth, diced tomatoes, and green chilies
Bring to a simmer and cook for 15-20 minutes
Serve hot, garnished with shredded cheddar cheese, chopped cilantro, and lime wedges
