Southwestern Pasta Salad
A delicious Southwestern Pasta Salad that combines pasta with a variety of colorful veggies, black beans, and a zesty dressing. It's a perfect side dish for BBQs, picnics, or as a light meal on its own.
Ingredients:
- 8 oz rotini pasta
- 1 cup corn kernels fresh or frozen
- 1 cup black beans canned, drained, and rinsed
- 1 cup cherry tomatoes halved
- 1/2 cup red bell pepper diced
- 1/2 cup green bell pepper diced
- 1/4 cup red onion finely chopped
- 1/4 cup fresh cilantro chopped
- 1/2 cup cheddar cheese shredded
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions:
Cook the rotini pasta according to package instructions until al dente
Drain and rinse with cold water to cool it down
In a large bowl, combine the cooked pasta, corn, black beans, cherry tomatoes, red bell pepper, green bell pepper, red onion, cilantro, and cheddar cheese
In a small bowl, whisk together the sour cream, mayonnaise, lime juice, chili powder, cumin, salt, and pepper until well combined
Pour the dressing over the pasta salad and toss to coat all the ingredients evenly
Chill the Southwestern Pasta Salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together
Serve cold and enjoy!
