Huevos Rancheros Deviled Eggs
When you make Huevos Rancheros Deviled Eggs, you get the flavors of a traditional Mexican breakfast dish and the creamy goodness of deviled eggs. They're a great low-carb snack or party food because they taste great and fill you up.
Ingredients:
- 6 hard-boiled eggs, peeled and halved lengthwise
- 2 tablespoons mayonnaise
- 2 teaspoons Dijon mustard
- 2 teaspoons hot sauce adjust to taste
- 1/4 cup diced tomatoes
- 2 tablespoons diced red onion
- 2 tablespoons chopped fresh cilantro
- 1/4 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions:
Take the egg yolks out of the eggs that have been cut in half and put them in a bowl
With a fork, mash the egg yolks
Then, add the Dijon mustard, hot sauce, salt, and pepper
Mix everything together well
The lettuce, red onion, and cilantro should be mixed into the egg yolk mixture
Put the yolk mixture back into the egg white halves, making a filling that is round
Add cheddar cheese shreds to the top of each deviled egg
Put the deviled eggs in the fridge for at least 30 minutes before you serve them
If you want, you can add more chopped cilantro and hot sauce as a garnish
As a tasty low-carb party food or snack, serve!
