Keto No Potato Salad



A keto-friendly take on potato salad that uses cauliflower instead of potatoes to make it lower in carbs. This sauce is creamy, sour, and full of flavor!

Ingredients:

  • 4 cups cauliflower florets
  • 4 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped dill pickles
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

When the cauliflower florets are soft, steam or boil them

Then, drain them and let them cool

Put chopped eggs, mayonnaise, Dijon mustard, pickles, parsley, apple cider vinegar, and garlic powder in a large bowl

Add salt and pepper to taste and mix until everything is well mixed

Put it in the fridge for at least an hour before serving so the flavors can mix
