Rhubarb Berry Jam



The sweetness of mixed berries and the tartness of rhubarb combine to create the ideal flavor balance in this delicious Rhubarb Berry Jam. It makes a delicious sweet treat any time of day or a lovely addition to your breakfast table.

Ingredients:

  • 3 cups rhubarb, chopped
  • 2 cups mixed berries strawberries, blueberries, raspberries
  • 2 cups granulated sugar
  • 1 lemon, juiced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions:

Combine the chopped rhubarb, mixed berries, and sugar in a large bowl

Let them sit together for about 1 hour, allowing the sugar to draw out the juices from the fruit

After an hour, transfer the fruit mixture to a large saucepan and add the lemon juice and lemon zest

Cook the mixture over medium heat, stirring frequently, until it comes to a boil

Reduce the heat and simmer for 20-25 minutes, or until the jam thickens and reaches the desired consistency

Stir in the vanilla extract and continue to cook for an additional 2 minutes

Remove the jam from the heat and let it cool slightly

It will thicken further as it cools

Transfer the rhubarb berry jam to sterilized jars, seal them, and let them cool completely before storing in the refrigerator
